In the kitchen, most people will not tell you, you start way before the noon time, if you want to get these side dishes near by done, and by the noon time, you re-heat them. That is what most people do. They running the restaurant has to go in early, and you prepare a lot of the things before the noon time arrives.


So let's say me Anna prepare the side dish, this is the thing with Nick, he doesn't really like the pasta to get boiled before, I never ask him why. It has to be near the time to eat, so we boil them. But with some other guys, if they take the oil options, I think he knows you get fat to eat all of that or some early prepare the pasta. He has his budget.
